Zucchini Pizza Bake

Prepare one skinless boneless chicken breast, pan fried in coconut oil until cooked. Season with pink Himalayan sea salt, pepper and Italian seasoning to taste. Preheat oven to 425 degrees. Spray with olive oil or line a 13” x 9” pan .

Ingredients:

One large zucchini (or 2 small ones), sliced thin lengthwise
Cream cheese, softened

Salt and pepper to taste

Italian seasoning

Parmesan cheese

One jar spaghetti sauce

Mozzarella cheese

Havarti cheese

6-10 garlic cloves, chopped small

Half medium onion, chopped small

Lay sliced zucchini in pan

Smear cream cheese on zucchini’s

Salt (use pink Himalayan) and pepper to taste

Sprinkle Italian seasoning to liking

Slice cooked chicken breast into small bite sized pieces, lay onto zucchini’s

Sprinkle zucchini’s with 3 tablespoons chopped onions and 4 garlic cloves chopped

Spoon spaghetti sauce (not pizza sauce) on top of zucchini’s

Sprinkle mozzarella cheese and Parmesan cheese. (If you like it more cheesy like we do, add slices of provolone or havarti in strips.)

Sprinkle with a little more Italian seasoning

Bake for 20 minutes until cheese is golden brown

This makes one pan. I double this recipe for me, my husband and my 20-year old son.
