Stuffed Pepper Rings

Preheat oven to 400 degrees.

Ingredients:

1 lb organic, grass-fed beef or organic ground turkey

3 organic peppers - 1 orange, 1 red, 1 yellow

1 organic green pepper, julienned

1 28oz jar of your favorite organic spaghetti sauce

1 heaping cup cauliflower rice

1 cup shredded mozzarella or Italian cheese blend

6 slices organic provolone cheese

1/4 -1/2 purple onion-chopped

6-10 garlic cloves-chopped

Italian seasoning to taste

Salt (Himalayan Pink Sea Salt is best) and pepper to taste

Directions:

Prepare peppers. I use one orange, one red, and one yellow pepper. Slice off the tops and pull out the seedy insides. Wash and rinse out. Thinly slice the bottom of the peppers, then cut peppers in half, making “rings”. Place prepared peppers in 13’x 9” glass baking dish. Spray 5” x 8” glass pan with organic olive oil. Optional: you make place your prepared peppers into the oven while preparing the steak mixture to help soften them. Otherwise, just set them aside if you like them a bit firmer like me.

Lightly brown meat in pan over medium heat with onions and garlic. Note: When using grass-fed meat, there’s no need to drain. Otherwise, drain meat if you need to before adding in garlic and onions. Add in julienned green peppers until desired softness. Add in cauliflower rice. Season with Italian seasoning, salt and pepper. Turn off burner. Mix in jar of spaghetti sauce. Then, mix in shredded cheese. Stir until combined.

Spoon meat mixture into pepper rings making them very full. Use provolone cheese slices placed on top of rings.

Bake in oven, uncovered for about 30 minutes, until desired tenderness or until cheese is slightly browned or melted.
