Sour Kraut and Red Potatoes

Ingredients:

4 medium red potatoes, quartered into bite size pieces

1-2 tablespoons coconut oil or real butter for cooking potatoes

2 tablespoons sweet onion, chopped

3 garlic cloves, minced

1 package Applegate Chicken & Apple Sausage (or any nitrate-free sausage), sliced in bite size pieces

1 jar organic (live) sour kraut

1 medium organic red apple, sliced (optional)

Directions:

In large pan, cook potatoes in coconut oil or butter until almost done. I add a little bit of water to the pan and throw a lid on them. Toss in chopped onions and minced garlic. When potatoes feel almost done, add in sliced Chicken & Apple sausage. Add in apple slices. Cook until meat is heated through. Finally add in sour kraut. Mix all ingredients together. Add salt and pepper to taste. Enjoy!

May omit the potatoes for a more carb-limited option.
