Lentil Soup

Total Time: 50 min

Ingredients:

1 pound organic grass-fed ground beef (or meat of your choice)

2 tablespoons organic extra virgin olive oil or coconut oil, plus extra for drizzling

1 organic med onion, chopped

2 organic carrots, peeled and chopped

2 organic celery stalks, chopped

2 organic garlic gloves, chopped

Organic Sea Salt and pepper to taste

1 diced organic tomato

2 handfuls organic baby spinach leaves

1 ¼ cups organic lentils

11 cups organic chicken broth

1 tablespoon organic Italian seasoning

6 organic potatoes, chopped

1 cup Parmesan cheese

 

Directions:

Brown ground beef, drain and set aside.

Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery. Add the garlic, salt and pepper and sauté until the veggies are tender, about 5 minutes. Add broth, potatoes and the lentils. Add Italian seasoning, tomatoes, and spinach. Stir. Bring to a rapid boil over high heat, then cover and simmer over low heat until the lentils are tender, about 40 to 50 minutes.   

 

Ladle in soup bowls, sprinkle with Parmesan cheese and serve.
