Keto Cheesecake Fluff

During this keto reboot, this dessert has been my go-to dessert for fighting these sugar cravings. It’s high fat and I use Swerve sweetener, which when I test my blood glucose levels, does not rise after eating this. Keep in mind that this is intended just as a tool to use while combating the sugar cravings. One step at a time is key.

With that said, this dessert makes a great substitution especially for holidays, family dinners and events, and gatherings so you don’t feel like you’re missing out on anything. If you make the presentation, I’m going to bet that your family will grab for your keto dessert first before the others as mine did! Enjoy!

INGREDIENTS

  • 8 ounces cream cheese softened

  • 1/4 cup Swerve sweetener, granular

  • 1 ½ teaspoons vanilla extract

  • 1 cup heavy whipping cream or regular heavy cream

 

 

INSTRUCTIONS

  • Beat cream cheese with Swerve, vanilla with an electric mixer until well combined.

  • In separate bowl, beat heavy cream with mixer until stiff peaks form.

  • Fold the whipped cream into cream cheese mixture until well incorporated.

  • Beat with an electric mixer on high until light and fluffy.

  • Refrigerate for at least two hours. Pipe or spoon into individual serving dishes. Top with sugar-free chocolate, if desired. (My keto version is pictured on the left. It contains only Lily’s dark chocolate chips. If not following keto, can top with fresh fruit or chocolate sauce and peanut butter chips as I did here.)
